Press Menu key, Tools, Utilities >Speed dial.
Pick a number (2-9) & assign a phone no. from your Contacts list by selecting Options>Assign.
Unfortunatly you are unable to assign keypad number 1 to a speed dial position as it is preset to voicemail.

There are a couple of different ways to access your emails from an S60 device such as the Nokia N95.
